Warmer weather always makes me think of fresh, juicy berries! They’re filling and refreshing and naturally sweet, which my sweet teeth love! I saw teeth because I think my whole mouth is sweet…not just one tooth.

But, the natural sweetness isn’t the only good part about these Protein  Berry Crumb Bars. They’re also high in protein, complex carbs, and healthy fats. Basically, you’ve got the perfect blend of nutrients all in one perfectly portable snack. They’ll help keep your energy up while you’re on the go or lounging by the pool (hey, that’s exhausting, too!) And, you won’t be tempted to grab a quick, high sugar snack instead.

So, you might be thinking to yourself, “Self, something so delicious must be hard to make or full o crazy, hard to find ingredients.” Well, tell yourself from myself that these bars are super easy to make and are pretty simple on ingredients. You probably have them all in your home already. They’re basically made up of oats, protein powder, almond butter, and fruit.

The recipe is also basically fool proof and can work with so many variations. So, if you have dietary preferences or love a specific kind of fruit, you can make these berry crumb bars to your liking. I’ve tested them with both whey protein and rice protein powder, and both work/taste equally as good! I also made them with peanut butter in place of the almond butter. For these bars, I prefer the almond butter, but if you’re going for that pb & j feel, peanut butter is gonna do the trick!

As for the fruit, I used strawberries and raspberries. But, use what you love or what’s in season. As long as you stick with the same measurements, you can’t go wrong!

You know what fruit is underused? Grapes! Why don’t people use grapes more in pastries and desserts? Just thinking out loud (err….online??) here. What fruits are you going to use??

  • 1 cup rolled oats
  • 1/2 cup protein powder, vanilla or plain
  • 1/4 cup cornstarch
  • 1/4 cup almond butter
  • 1/4 cup milk of choice
  • 1/4 cup honey (or other sticky sweetener of choice)
  • 2 tsp light brown sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • 3/4 cup berries, chopped
  • Crumb Topping
  • 1/2 cup rolled oats
  • 1/3 cup protein powder, vanilla or plain
  • 1/4 cup almond butter
  • 1 Tbsp water
  • 1 tsp cinnamon
  • Pinch of salt


  1. Preheat the oven to 350 F. Line a 8"X 8" square pan with aluminum foil and grease the foil.
  2. In a large bowl, combine the oats, protein powder, cornstarch, brown sugar, cinnamon, and salt.
  3. Add to the dry ingredients the almond butter, milk, sweetener, and vanilla extract. Stir until well incorporated.
  4. Press the dough evenly into the prepared pan.
  5. Spread the fruit out evenly over the crust base.
  6. In the same bowl previously used, combine the crumb topping ingredients of oats, protein powder, cinnamon salt, almond butter, and water. The topping mixture should stick together if pressed between your fingers but still be a little crumbly.
  7. Crumble the mixture over the fruit.
  8. Bake for 30 min. or until the crust is firm and the crumb topping has a golden brown color around the edges.
  9. Allow the bars to cool completely in the pan.
  10. Lift the bars out of the pan using the aluminum foil, then slice them into squares.
  11. Eat up and enjoy!
