Rice itself is gluten free, but lots of crispy cereals have additives that are not. Also, there are brown rice crispy cereals out there, which would be totally awesome in these crispy balls, as well.

Ingredients

Instructions

  1. In a medium bowl, add the peanut butter and honey and stir together. If the peanut butter is on the harder side, put the peanut butter and honey in a medium sized saucepan over medium heat and stir until creamy and drippy.
  2. To the bowl (removed from the heat if it was needed), add the vanilla extract and salt and stir together.
  3. Add the oats, cereal, and powdered peanut butter. Stir until everything is incorporated.
  4. Scoop out about 1 Tbsp of the mixture and roll it into a ball. Depending on how creamy your peanut butter is, it might work better to press the mixture together rather than roll it.
  5. Placed the formed balls on a plate or cookie sheet and place in the fridge to firm up (about 20-30 min).
  6. Easy peasy! You've got a delicious on-the-go snack!

    1. Hi Andrea! I think some people have had success swapping the peanut butter powder out for almond flour. I'd love to know how it turns out! :)
  6. I needed a sugar free snack for a youth church class tonight and decided that these looked fantastic. Unfortunately, I am out of Peanut Butter Powder and we live in a small town with no grocery store. And... we are having a snow storm today. So, I replaced the peanut butter powder with strawberry powder. (Freeze dried strawberries ground into powder). They were so good that I had to make a second batch! Cant wait to try them with the peanut butter powder. Thanks so much for saving the day!

  10. Just made these. Very good and very easy. Need to make 300 for a bicycling event that brings around 300 cyclists to our city. My question is can you freeze these?

    Hi there. I'm thinking of making these for my cooking class but I'm wondering if you can make them without peanut butter powder. I doubt lots of families have that :-(..
    1. Hey there! I don't think they'd hold up so well (aka fall apart ;)) without the powdered peanut butter since it absorbs a lot of the moisture. I think some people have had success swapping it out for almond flour. Or you could experiment with the ratios - like less honey or more oats. Hope that helps! :)
